A friend gave me this recipe that makes good use of our bountiful apple harvest. It's a delightful addition to breakfast or brunch.
Stir in the yeast mixture, milk and eggs until blended. Turn onto a lightly floured surface; knead about 20 times (dough will be slightly sticky). Cover and refrigerate for at least 2 hours. For filling, combine the apples, walnuts, sugar and cinnamon; set aside.
Place the chopped apples and 3 tablespoons butter in a medium saucepan. Combine 1/2 cup brown sugar, 1 1/2 tablespoons flour, 1/4 teaspoon salt, cinnamon, and nutmeg and mix well; add the mixture to the saucepan. Bring the mixture to a boil over medium-high heat and then reduce the heat to a simmer.
