Nov 7, 2013 – In a large saute pan, warm a splash of olive oil over medium-low heat. Add the yellow beans, shallots, garlic and chili flakes. Saute the beans until fragrant, about 1 minute. Add a small splash of water to the pan, and place a lid on top. Cook the beans on low for about 3-5 minutes.
Add 1 tablespoon of the salt and the wax beans, return to a boil, and cook until just tender, about 3 minutes. Drain and plunge into a bowl of ice water. Drain again and set aside. Heat the oil and butter in a large skillet over medium heat.
Cook the beans in a large pot of salted boiling water until crisp-tender, about 5 minutes.
