Preheat oven to 350 degrees. Spray bottom of pan with oil and flour lightly. Peel, core, and grate apples. Slice zucchini in half, remove seeds and grate. In a large bowl, beat eggs and sugar. Add oil and continue to mix until well blended. Pour batter into prepared pan and bake for 45 minutes. Serve warm or cooled.
Toss together 4 cups chopped zucchini, lemon juice and salt. Place mixture into frying pan and cook until tender-crisp. In a separate bowl, mix together the brown sugar, cinnamon, cream of tartar, nutmeg and flour. Add the cooked zucchini to sugar mixture and mix well.
Directions. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 X 13 inch pan. In a large bowl, blend the sugar with the eggs. Add the oil, and mix well. Mix in flour, spices, salt, and baking soda. Stir in the nuts and the apples, carrots, or zucchini. Bake for 40 minutes. Serve warm or cooled.
